Fancy Kabobs: It’s All About the Presentation

A great, easy meal to make for a summer
get together is grilled kabobs. You can skewer most any combination
of meat, seafood, and veggies to suite your taste and that of your
guests. This is also a great way to use up leftovers, or take one
steak and feed four people.
To make this simple meal fancy and fun, all you need is a fresh
pineapple. Cut the top of the pineapple off about 1/3 of the way
down, leaving more fruit attached to the green than you would
normally if you were using all of the fruit. Cut the bottom of the
pineapple up and skewer it on the kabobs with the rest of your
goodies and set the top aside.
Once the kabobs are grilled and ready to serve, place the top of
the pineapple in a large bowl or on a large platter. Stab the
kabobs into the fruit of the pineapple and serve. This makes a
lovely, tropical presentation and works kind of like a lazy susan,
making it easy for all the guests round the table to help
themselves.
Serve kabobs with your choice of rice or cold pasta salad and a
variety of dipping sauces.
Below are some kabob recipes for inspiration, but don't be afraid
to skewer, season and grill most anything you have in the fridge.
Mix fruits, veggies and proteins to come up with new, exciting
combinations. You can even chop up all the ingredients and invite
friends over for a 'build your own kabob' party. Be sure to soak
bamboo skewers in water before skewering and grilling to keep them
from burning up. Oh, and roses sweetened lime juice, normally
reserved for cocktails, makes a mean marinade for shrimp or
scallops. Enjoy!
