New Recipe Alert! Sunflower Whole Wheat Bread

Photobucket

It has taken a while for me to tweak out a whole wheat bread recipe that is not too dense and bakes and slices really well. I'm happy to report I have finally done it! This is some of the best bread I have ever made. The sunflower seeds remind me of the old school Arnold's Health Nut bread, before they went and changed the recipe. Hope you like it!
Ingredients
1 packet of active dry yeast
2T warm water
1c milk (I used skim)
1/4 c vegetable oil
1/4 c honey
1/3 c water
3 1/2 c whole wheat flour (I used King Arthur)
1 1/4 t salt
1/2 c unsalted sunflower seeds
Instructions
Dissolve dry yeast into 2 tablespoons of warm water and set aside. In a stand mixer with dough hook attachment, add all remaining ingredients except sunflower seeds. Begin to mix and add yeast mixture. Kneed in mixer for 6 min. Transfer dough onto lightly floured surface and sprinkle sunflower seeds on dough and/or surface. Kneed sunflower seeds into dough. Transfer to a lightly greased loaf pan and let rise for 1 hour. I put mine in the oven with the oven light on. After 1 hour, punch dough down and let it rise for another hour or so until the dough has double in size and nicely fills the loaf pan. Bake at 350 for 40 min. Cool, slice and enjoy!
